When Thomas Lyson developed the concept of Civic Agriculture, he provided a useful framework for considering a range of distinct but related professional areas. One such profession is dietetics. Registered dietitians work in a broad range of professional settings, including academic, clinical, administrative, hospitality, food service, and consulting. Dietetic practice has traditionally and primarily been informed by advances in understanding of the role nutrients and food play in enhancing health and reducing chronic disease risk. With support from the American (...) Dietetic Association (ADA), the largest credentialing organization for nutrition practitioners, an increasing number of dietetic professionals consider food and agricultural sustainability issues relevant to their training and practice. Longstanding organizational structures, practices, and alliances characterizing the association, however, may limit the extent to which the organization and its members unify around a concept of civic dietetics. Recent developments within the ADA indicating an emergence of civic dietetics. This paper suggests ways the civic agriculture concept may be applied to dietetic practice, and how civic dietetics may help further civic agriculture and sustainable food systems. (shrink)

BackgroundThe rigor and integrity of the published research in nutrition studies has come into serious question in recent years. Concerns focus on the use of flexible data analysis practices and selective reporting and the failure of peer review journals to identify and correct these practices. In response, it has been proposed that journals employ editorial procedures designed to improve the transparency of published research.ObjectiveThe present study examines the adoption of editorial procedures designed to improve the reporting of empirical studies in (...) the field of nutrition and dietetics research.DesignThe instructions for authors of 43 journals included in Quartiles 1 and 2 of the Clarivate Analytics’ 2018 Journal Citation Report category Nutrition and Dietetics were reviewed. For journals that published original research, conflict of interest disclosure, recommendation of reporting guidelines, registration of clinical trials, registration of other types of studies, encouraging data sharing, and use of the Registered Reports were assessed. For journals that only published reviews, all of the procedures except clinical trial registration were assessed.ResultsThirty-three journals published original research and 10 published only reviews. Conflict of interest disclosure was required by all 33 original research journals. Use of guidelines, trial registration and encouragement of data sharing were mentioned by 30, 27 and 25 journals, respectively. Registration of other studies was required by eight and none offered Registered Reports as a publication option at the time of the review. All 10 review journals required conflict of interest disclosure, four recommended data sharing and three the use of guidelines. None mentioned the other two procedures.ConclusionsWhile nutrition journals have adopted a number of procedures designed to improve the reporting of research findings, their limited effects likely result from the mechanisms through which they influence analytic flexibility and selective reporting and the extent to which they are properly implemented and enforced by journals. Hynek Bartos does the field of ancient philosophy a great service by detailing the influence of early Greek thinkers (such as Heraclitus, Empedocles, Anaxagoras, Democritus, and Diogenes of Apollonia) on the Hippocratic work On Regimen, and by demonstrating that work’s innovative engagement with contemporary scientific and philosophical concepts as well as its direct influence on Plato and Aristotle. His study usefully counteracts the lamentable tendency among ancient philosophers to ignore or downplay the influence of medical literature on philosophy in general, (...) and to heap scorn on this text in particular, which Kirk, Raven, and Schofield considered ‘an eclectic and very superficial quasi- philosophical treatise’ and Barnes famously called ‘a silly farrago of ill-digested Presocratic opinions’. This essay addresses Paul Thompson’s claim (made in two pieces separated by 20 years) that “you are not what you eat”; that is, that dietetics is not an ethical matter. I issue a series of challenges to Thompson’s position, all of which have a common underpinning, namely that his critiques of dietetics sound more like the sort I’d expect from an analytic philosopher than from a pragmatist. They are rooted not only in a tightly drawn (if widely philosophically (...) accepted) definition of ethics, but also in a very tightly drawn definition of diet, a definition that doesn’t take much account of context. That the stream from producer to consumer is continuous argues for not forgetting that eating is one link in a chain of activities—a link that literally cannot exist without those that come before it. Resting on this common underpinning are three specific complaints. The first two address what I take to be his implicit definitions of eating and of personhood, challenging his claims that it is possible in principle to separate self-regarding from other-regarding claims, and that purely self-regarding claims are not ethically relevant. The third pushes back on the matter of whether ethics must concern itself all and only with actions that have an impact on others. (shrink)

: The article provides an introduction to an autograph draft of a letter on dietetics Kant wrote to the physician Christoph Wilhelm Hufeland and uses it as a springboard for the critical discussion of Kant’s dietetics as well as its systematic place in his philosophy. The final draft of Kant’s letter to Hufeland became the third part of The Conflict of the Faculties. The article argues that Kant assigns dietetics, understood as the regulation of the traditional nonnaturals, (...) to philosophy and not to medicine; that he regards moral health as the basis for physical health; and that his view of the systematic place of dietetics in his philosophy is inconsistent. Therapeutic translations of the microbiome-gut-brain (MGB) axis are reconstructing the educational subject in a manner amenable to Foucauldian analysis. Yet, at the same time, under the sway of MGB research social scientists are taking a biosocial turn that threatens the integrity of Foucault’s historicizing philosophical project. Meeting that challenge head-on, this article argues that the MGB axis augments the neurobiological constitution of the educational subject by means of a dietetic mode of subjectivation. Absent a pedagogical element, there is a hollowness (...) to critical academics’ claims that holobiontic self-conceptions springing from the axis can elicit a resistant subjectivity. Though wild pedagogies might inform a resistant tactics of the self, contemporary self-technologies are – as Foucault has taught us – a pale shadow of the ancient Greek conception of dietetics as an holistic, embodied and ensouled practice. At the intersection between the disciplinary apparatuses of criminology and education, therefore, the MGB-driven biosocial turn unambiguously reinforces the social control function of schooling. Nietzsche and Medicine. Especially in times of a pandemic, dealing with terms such as health, illness, healing and medicine is of particular interest. Three recently published books are devoted to the problem of medicine in Nietzsche’s work. In addition to impulses for contemporary medical-ethical debates, this review articles discusses Nietzsche’s relationship to the ancient philosophy of medical self-care, the concepts of suffering, illness and health as well as the influence of the contemporary natural sciences on Nietzsche’s understanding of medicine. Nietzsche’s (...) view of medicine has already been the subject of several other recent publications: in addition to the publications that deal directly with Nietzsche’s understanding of medicine, I will also discuss those focused on the effect of Nietzsche’s scientific reading on his work as well as publications on the topics of illness and health and on the role of ancient dietetics, therapeutics and self-care within Nietzsche’s thinking. In the presentation of his project about ‘somaesthetics’, Richard Shusterman claimed that the recurring neglect of the body in aesthetics was disastrously introduced by Alexander Gottlieb Baumgarten (1714–1762) in his first formulation of aesthetics as a discipline in the mid-eighteenth century. In the present essay I aim to call this thesis into question, investigating for the first time the role of the body in Baumgarten’s thought and focusing on its significance for the founding of aesthetics. First, I consider Baumgarten’s doctrine (...) of the body in general and of the human body in particular, in its relationship with the soul. I then turn to discuss Baumgarten’s resumption of the scholastic discipline of ‘somatology’ as a philosophical investigation of the body in both its theoretical and practical – namely, dietetical, side. On these bases, I deal with two examples of dietetic embellishment of the body, one presented by Baumgarten himself (cosmetics) and the other put forward by his pupil and co-founder of disciplinary aesthetics Georg Friedrich Meier (physical exercise and somatic fine arts). Subsequently, I explore the ways in which Meier and Baumgarten use dietetics to foster beautiful thinking. Finally, I conclude that nascent aesthetics is concerned with the aesthetic care of the body both insofar as the body can be a stage of aesthetic value and insofar as the body is a necessary presupposition for beautiful thinking. In this paper I analyze Kant’s ideas about eating and drinking. First, I show that gluttony and drunkenness are considered ways to oppose to the duty to oneself as an animal being. Second, I claim that for Kant there is a healthy way of having meals, which consists in eating together with friends. Then I indicate that Kant accepts that one can drink at dinner parties but has to avoid drinks that lead to drunkenness and unsocial behavior. In this sense, (...) he draws a classification of the various kinds of alcoholic drinks, according to their potential harm. Afterwards, I illustrate how Kant’s own intimate life was a daily practice of his thoughts on dietetic conceptions and on what is better for digestion and health. According to the Academy of Nutrition and Dietetics’ influential position statement on vegetarianism, meat and seafood can be replaced with milk, soy/legumes, and eggs without any negative effects in children. The United States Department of Agriculture endorses a similar view. The present paper argues that the Academy of Nutrition and Dietetics ignores or gives short shrift to direct and indirect evidence that vegetarianism may be associated with serious risks for brain and body development in fetuses and children. Regular (...) supplementation with iron, zinc, and B12 will not mitigate all of these risks. Consequently, we cannot say decisively that vegetarianism or veganism is safe for children. (shrink)

Esta es la tesis que defenderá en su escrito de madurez titulado Las facultades del alma siguen los temperamentos del cuerpo. Para Galeno, como antes para Platón y Aristóteles, la forma de vida, que incluye la nutrición, incide en la salud y en la enfermedad del alma. The virtue of trust is often spoken of as central to the work of dietitians working in nutrition counseling, especially in the context of disordered eating/eating disorders nutrition therapy. Indeed, dietitians are purported to be the most trusted source of information on nutrition and food by professional associations such as Dietitians of Canada. Here trust is explored through educational, relational, and virtue theory in order to elucidate trusts meaning and relevance to dietitians work and interactions with each other, including the (...) general public. If dietitians are to continue to be trusted during times of skepticism in expert knowledge, reflexivity, active contestation, and moral testing in the context of our socio-political milieu need be employed so that we as a profession may respond to clients in respectful, authentic, meaningful ways; practices worthy of our trust. The article considers the nature of series as a narrative, focusing especially on its chronotope, i.e. its spatiotemporal coordinates. The concept of chronotope can be applied at at least two different levels of the interpretation of a narrative: the real world of reception and the expressive form of narration. The impact of series entails both aspects. It is for this reason that series, once on television then on the internet, represented a revolutionary turn in the modern experience of storytelling. Series (...) are therefore bound to the progressive spread of a new form of sociality known as a digital “total mobilisation”. Since the era of TV series up to the emergence of web series, seriality has been able to regulate the increase of interaction in the use of visual devices. Series play the role of a dietetical regulator, which designs the spectators’ attention. An artistic, i.e. experimental, exploitation of this new form of storytelling is possible when one considers the emergence of a new narrative genre, which we propose to call the “short form”. Galen's æuvre presents a remarkably varied body of texts–varied in subject matter, style, and didactic purpose. Logical tracts sit alongside tomes of drug–lore; handbooks of dietetics alongside anatomical investigations; treatises of physiology alongside ethical opuscula. These differences in type have received some, though as yet insufficient, scholarly attention. Mario Vegetti demonstrated the coexistence of two ‘profili’ or images of the art of medicine: Galen presents the art as an Aristotelian deductive science, on the one hand, and as a technician's (...) craft, on the other. The former image, offering an ambitious elevation of the doctor's cultural status, has medicine as a philosophical episteme analogous to the mathematical sciences, exercised above all to provide causal accounts and logical demonstrations, and centred on the knowledge of anatomy. The second image is that of the clinician, concerned with the body in its pathological manifestations and using as its prime model the ‘pre-anatomical’ theory of the humours. And the content of the treatises shifts in relation to this dual image: ‘profilo alto’ and ‘profilo basso’ are reflected in different types of work. Polemical writings such as the Protrepticus, as well as the great treatises of anatomy and physiology, De usu partium and De naturalibus facultatibus, present medicine in the former light, while works like De temperamentis or Quod animi mores base themselves on humoral pathology and accord with the earlier, artisan-like image. Moral concern with food intake is as old asmorality itself. In the course of history, however,several ways of critically examining practices of foodproduction and food intake have been developed.Whereas ancient Greek food ethics concentrated on theproblem of temperance, and ancient Jewish ethics onthe distinction between legitimate and illicit foodproducts, early Christian morality simply refused toattach any moral significance to food intake. In a 1983 interview, Michel Foucault contrasts our contemporary interest in sexual identity with the ancient Greek preoccupation with diet, arguing that sex has replaced food as the privileged medium of self-constitution in the modern West. In the same interview, Foucault argues that modern liberation movements should return to the ancient model of ethics, of which diet was a prime example, as aesthetics or self-transformative practice. In this paper I take up Foucault's argument with respect to the Animal Liberation Movement (...) and the dietetics of ethical vegetarianism. Contra Foucault, I suggest that diet has not been replaced by sexuality in the modern West, and that food choices, along with and intertwined with sexuality, continue to function as practices of self-constitution in both disciplinary and aesthetic fashions. I then consider the implications of this argument for the Animal Liberation Movement, exploring ways in which it might (and to some degree already does) take on aesthetic rather than moral strategies in order to pursue what Foucault once described as “an ethics of acts and their pleasures which would be able to take into account the pleasure of the other.”. Four important and influential policy statements on hunger that have served as national and international standards and guides for action have been reprinted here as a resource. They are (1) the Bellagio Declaration, which was produced by 24 international experts meeting to address the problem of world hunger in 1989 at the Rockefeller Foundation Conference Center in Bellagio, Italy; (2) the Medford Declaration to End Hunger in the U. S., which was designed to be a domestic equivalent of the Bellagio (...) Declaration, was produced in April of 1990 at Tufts University by U. S. organizations concerned with domestic hunger; (3) the position statement of the American Dietetic Association (ADA) that was approved by the House of Delegates in 1990; and (4) the position statement of the Canadian Dietetic Association (CDA) that was approved by the executive of the CDA in 1991. Aiken's brief introduction to these four statements critically examines them to draw attention to some of their strengths and weaknesses and to help clarify some of their implicit normative assumptions and implications. The article surveys German-language ayurvedic cooking and nutrition books from 1990 until today. The semantic analysis reveals a market diversification that corresponds to the following categories: health, diet, spirituality, and individualism. These are main attractors of Ayurveda along with its promises of holistic balance and cosmological integration. Because this development can be interpreted as a reaction to the Western scientific formation of "Ayurveda" within popular life advice literature, this essay uses the concept of reflexive nutrition as derived from M. They began with careful histories of the patient’s complaints and his or her daily life course, customary activities, typical foods and beverages imbibed, and the exacerbation or relief of symptoms associated with any or all of these. They also asked questions about his physical and social environment. They carefully looked for any clinically pertinent signs, and might physically examine the patient or his excretions. When they arrived at a diagnosis (say, an excess of yellow or black bile, or of blood or phlegm), they would educate the patient about it and discuss possible approaches. Although leeching, emetics, or purgatives might be prescribed, “dietetics” was the core of the treatment. Much more than recommendations about dietary intake, this involved conversations about “lifestyle” management in general: exercise, fresh air, habit changes, and perhaps bathing in mineral waters or spas. If the patient were “melancholic” (which then included what we would now consider a variety of psychiatric disorders), he or she might be prescribed daily swimming and other forms of vigorous exercise, conversations with a philosopher, [End Page 347] attendance at theatrical comedies, or even referral to an Asklepian temple for “incubation sleep” and priestly dream interpretation. Often doctors worked closely with physical trainers, to whom they sent their patients. In short, their orientation was holistic (“mind”/”body” integration), directed first and foremost toward an individual ill person.In the second century, C.E. Galen, despite his humoral and anatomical pathologies, was similarly holistic or functionalist. He resorted to a variety of physical examinational methods while also attending to the patient’s mental/emotional status. He described one case where he was attending a woman for syncopal episodes. His examinations of her included his customary attention to the pulse. During one evening session, a servant entered and happened to mention that he had just seen the handsome Pylades dancing. Suddenly her pulse became irregular and she fainted straight away. This led Galen to consider love sickness, and perhaps not humoral or organ pathology. He tested his hypothesis during subsequent visits. Whenever another dancer or actor was mentioned, her pulse remained regular and her sensorium alert, but when Pylades was mentioned the irregular pulse and fainting recurred. Because she was married, Galen realized her insoluble conflict, and treated her accordingly.From the fall of Rome until the rise of University Medicine in the later Middle Ages, medical lore and doctoring was in monastic hands—each monastery had its clerical medic, who might also attend outsiders. They were attuned to the traditional triad of major mental disorders—mania, melancholia, and phrenitis—which they explained somatically. However, they also encountered lesser mental/emotional disorders for which they developed their own nosology. “Scrupulosity,” for example, characterized a committed monk with an unrealistic sense of sinfulness and guilt—which often drove him to self-mortification such as flagellation, hair shirts with chains underneath, and so forth, for which the remedy was kindly pastoral counseling. “Accedia” was akin to our “dysthymia,” whose sufferer was affected by sadness, lassitude, and impaired capacity to carry out the monastic routine. This was viewed as straddling the boundary between sickness and sin. It is also proposed that the best way to refound virtue ethics is to return to the Greek concept of technē tou biou, literally "craft of life." The ancients did not distinguish between craft and fine art, and the meaning of technē, even in its Latin form, ars, (...) still retains the meaning of skillful crafting and discipline. In Greco-Roman culture, techniques were very specific, covering dietetics, economics, and erotics. In ancient China, moral cultivation was intimately connected to the arts, from archery to poetry, music, and dance, such that virtually every activity would have both moral and aesthetic meaning. Using R. D. Collingwood's distinction between craft and fine art, it is proposed that the latter, particularly the performing arts of music and dance, can serve as a model for virtue ethics in our times. This article questions whether food is replacing sex as the ground of identity negotiation. Examining several food sites, and following Foucault's suggestive remarks about the Greek dietetic regimen, I argue that food can be seen as a line that intersects with sexuality. Rather than privileging either, an alternative ethics can be glimpsed in the doubling of food and sex.

The article depicts the traditional fishing, the outdoor drying of Stockfish, and its cultural and culinary uses in a historic context and today. The fishing of the North East Arctic cod (Gadus morhua) is a sustainable coastal fishery for millennia in the North of Norway, but climate change challenges the outdoor drying of stockfish. The article follows the stockfish history during the hanseatic office in Bergen until the present trade. The early commercial production of stockfish was due to urban expansion, (...) fasting rules and the need to provide nutritious food to the poor in Northern Europe and beyond. The article follows the traces of stockfish expansion as a staple food, first to Northern Europe, later to central Europe and the Mediterranean countries, before ending up as an important food supply to West-African countries in the nineteenth century. The article explains the early Greek and Renaissance concerns for eating fish and for stockfish in particular due to dietetic and medical beliefs. Then the cultural impact of stockfish is explained by showing some examples of both living and disappearing culinary traditions. The use of lye for soaking stockfish is not only a Scandinavian tradition but a little known shared European craft and culinary practice. Battering the stockfish with a wooden hammer, the use of lye for durability and water for softening the hard fish texture was practiced for preparing stockfish. Finally, the article touches upon rules, regulations and organisations that can help strengthening and preserve the traditional craft and culinary uses of stockfish today. (shrink)

The main impulse for this considerations is a beautiful Professor Adam Nowaczyk's text "The spell of Plato. Reflections on Roman Ingarden's ontology". My general (negative) thesis is that no hyper-dietetic, i.e. monocategorial, ontology (meant as the theory of real objects) is not correct. Thus neither the theory of sets (if it assumed the uniqueness of the ontic category of sets), nor reism (if it assumed the uniquenes of the ontic category of things) or eventism (if it assumed the uniqueness of (...) the ontic category of events) are correct ontologies (meant as theses on existence of a certain ontic category). The consequence of this negative thesis is that only non-dietetic, i.e. polycategorial, ontology can be correct. I present a few arguments on account of theses two theses. (shrink)

Corporeality, Medical Technologies and Contemporary Culture engages the confusions and contradictions in current attitudes to, and practices of, the body. On the one hand, the body is where we turn for the certainties of nature; yet, on the other, it is the locus of a desire for permanent transformation and for constant reinvention. The body is at the same time worshipped and despised: so that now it has come to constitute not just an object of desire, but an object of (...) design. Addressing practices of corporeal ascesis- such as bodybuilding and dietetics - medical technologies - such as plastic surgery, prosthetics, and pharmacological interventions - and radical anatomical modifications- such as voluntary amputations, Francisco Ortega analyses how the body has become a screen for the projection of our ideas and imaginings about ourselves; and has also been turned into an object of suspicion, fear, anxiety, insecurity and discomfort. This study aims to clarify the role played by higher order dispositions in the context of the explanatory method in Regimen I and of the approach to dietetics in Regimen as a whole. My main claim is that there are two concomitant directions involved in the inquiry carried out in Chaps 25–36 of Regimen I: there is an inferential and revelatory move from premises about complex dispositions to the ‘invisible’, that is, to the particular composition of one's body ; (...) and there is a causal-explanatory move, based on such inferences, from the powers of elemental varieties and of their combinations to the resulting higher level dispositions. In both ancient tradition and modern research Pythagoreanism has been understood as a religious sect or as a philosophical and scientific community. Numerous attempts have been made to reconcile these pictures as well as to analyze them separately. The most recent scholarship compartmentalizes different facets of Pythagorean knowledge, but this offers no context for exploring their origins, development, and interdependence. This collection aims to reverse this trend, addressing connections between the different fields of Pythagorean knowledge, such as eschatology, metempsychosis, metaphysics, (...) epistemology, arithmology and numerology, music, dietetics and medicine as well as politics. In particular, the contributions discuss how the Pythagorean way of life related to more doctrinal aspects of knowledge, such as Pythagorean religion and science. The volume explores the effects of this interdependence between different kinds of knowledge both within the Pythagorean corpus and in its later reception. Chapters cover historical periods from the Archaic Period (6th century BC) to Neoplatonism, Early Christianity, the European and Arabic Middle Ages, and the Renaissance through to the Early Modern Period (17th century AD).
