Abstract

It is quintessential to be acquainted with the complex cultural linkages between a nation and the globalized world— notably, the Philippines as a part of the Southeast Asian Region. The study centers on Filipino cuisine, academization, and its affinities. We may regard the concept of food and the act of partaking in it (i.e., eating) as mundane and ubiquitous in a way. Instead, we must view food and subsistence as a crucial part of cultural and historical inquiry. Some social scientists and scholars dismiss the subject of food as a valuable source of tracing cultural and historical roots. Some people usually regard the recognition and intellectualization of food to Culinary Studies, but it is deemed limited. Truth be told, few to no literature sources reveres food and its role as significant in political, historical, and cultural discourse. This paper paves the way towards the intercultural relationship between the two regions, albeit clinging to unified cultural roots. Moreover, it may be interpreted as epistemological; nevertheless, it is essential to analyze food, subsistence, and diet through the lens of cultural history. The study can be defined the significance of Philippine cuisine in the Southeast Asian region’s macrocosmic space of food diversity. Consequently, the paper intends to present preliminary knowledge and investigation on the direct relationship between taste (aesthetics), food, and the expansion of the local concept of Kalutong Bayan. The researcher assumes that the contribution of his in-depth travels within the ten (10) countries across Southeast Asia (ASEAN) (2014-2018) led him to form potential linkages between what is being produced, served, and consumed may be considered vital in ascertaining historical roots of the Philippines and the entire region.
