Experiential learning in food and agricultural higher education takes many different forms. This paper highlights an immersive, comparative approach to a graduate food studies course in the dairy sector. It explores how students in this class experience a particular combination of field trips, culinary workshops, hands-on activities, and classroom discussions, and explores how the structure and combination of these course elements contributes to reflection, critical thought, and a more nuanced and complex understanding of food systems (or (...) not). Results suggest that this intensive compare/contrast approach to field trips and applied experiences, accompanied by multiple venues for in-depth verbal and written reflection on these experiences, can help facilitate (1) self-reflection, critical thinking, and broader systems thinking, (2) an understanding of and empathy towards conflicting views on food systems issues, and (3) an acceptance of and ability to work across differences, within the contradictions and complications that characterize food systems work. Early food regimes literature tended to concentrate on the global scale analysis of implicitly negative trends in global food relations. In recent years, early food regimes authors like Harriet Friedmann and Philip McMichael have begun to consider the sites of resistance, difference and opportunity that have been emerging around, and into contestation with, new food regime relations. This paper examines the emerging global-scale governance mechanism of environmental food auditing—particularly those being promoted by supermarkets and other (...) large food retailers—as an important new dynamic in our understanding of the politics and potentials of food regimes. Commencing with an examination of Friedmann’s corporate environmental food regime, two key dynamics are identified as being pivotal in the rise and decline of global-scale regimes: securing social legitimacy for food relations and the importance of ecological dynamics in global food relations. By extending McMichael’s notion of ‘Food from Nowhere’ versus ‘Food from Somewhere’, the paper interrogates the emergence of a cluster of relations that comprise ‘Food from Somewhere’ and examines whether this cluster of relations has the potential to change some of the constituent ecological dynamics of food regimes. These ecological dynamics have historically been problematic, amply demonstrating Marx’s metabolic rift as the early food regimes solidified relationships between ‘ecologies at a distance’. By using socio-ecological resilience theory, ‘Food from Somewhere’ is characterized as having denser ecological feedbacks and a more complex information flow in comparison to the invisibility and distanciation characterizing earlier regimes as well as contemporary ‘Food from Nowhere’. The conclusion of this article is that while ‘Food from Somewhere’ does provide one site of opportunity for changing some key food relations and ecologies, the social legitimacy of this new form of food relations does rely on the ongoing existence of the opposite, more regressive, pole of world food relations. The key question for resolving this tension appears to be whether new food relations can open up spaces for future, more ecologically connected, global-scale food relations. (shrink)

This article argues that present theoretical approaches within critical agri-food studies are inadequate for conceptualizing the role of non-humans in the shaping of farmer agency. While both political economy and actor-oriented approaches are significant in drawing attention to the broader social relations that construct and govern farmers as agents, the ordering and disordering influence of non-humans as part of these processes are neglected. Drawing upon a sociology of translation, located within actor network theory, the article explores how the (...) ontological move to recognize non-humans as actants contributes to a re-conceptualization of farmer agency. Through the application of four “moments” within a translation approach – problematization, interessement, enrollment, and mobilization – to a dairy planning workshop in Australia, it is concluded that non-humans are central in two key ways to programs governing the agency of farmers. First, they take the form of material artifacts and forms of inscription that are used by governing agencies to build durable actor networks. These inscriptions represent new ways of reflecting on farming practices and re-defining the scope for farmer action. Second, non-humans can take the form of material agents that, while crucial to the building of actor networks, are not always straightforward to enroll. The article demonstrates that problems enrolling these entities limit the efforts of governing agencies to “act at a distance” and shape farmer behavior. (shrink)

This is a book about food, philosophy, and intellectual property rights. Taken separately, these are three well-known subjects; but it is uncommon to consider them together. Delivering a rich field of disputes, the book is comprised of 50 case studies, organized around eight themes: images; genericity and descriptiveness; language traps; procedures; menus, recipes, and creativity; boundaries; biotech; and empowerment. The introductory chapter frames the selection of cases and encourages readers to look beyond them, envisaging new lenses to look (...) at food vis-à-vis intellectual property. The terrain encompassed is wide-ranging and reaches out to fine-grained aspects of food products, recipes, and cooking. Conceived for a wide scope of readers, the volume ultimately interrogates the links between food and cultural identity, bringing to the fore the ethical, political, aesthetic worth of culinary arts and gastronomic experiences. Contestation over one such system, nutritionalisation, currently involves an ungovernable array of actors. In describing the protagonists to the system of nutritionalisation, a classic confrontation emerges between technical and lifeworld rationality. Representing the former approach are actor networks responsible for the ‘trade-in-health’ sector which produces foods and nutritional values aimed at both over-nourished and under-nourished populations. Clinging to a lifeworld rationality are ‘culture eaters’ worldwide, for whom nutrition value relations are secondary to communal and ecological relations. This dynamic appears within wealthier Asian states which are emerging as central to the trade-in-nutritional health sector while acting to protect their own customary dietary practices. (shrink)

Abstract.In Canada, food assistance is provided through a widespread network of extra-governmental, community-based, charitable programs, popularly termed “food banks”. Most of the food they distribute has been donated by food producers, processors, and retailers or collected through appeals to the public. Some industry donations are of market quality, but many donations are “surplus” food that cannot be retailed. Drawing on insights from an ethnographic study of food bank work in southern Ontario, we examined how (...) the structure and function of food banks operate to facilitate the distribution of foods not marketed through the retail system. Our findings indicate that the handling of industry donations of unsaleable products is a labor-intensive activity, made possible by the surfeit of unpaid labor in food banks, the neediness of food bank clients, and clients’ lack of rights in this system. The marshalling of volunteer labor to serve a corporate need might be construed as a “win-win” situation because the work of salvaging edible foodstuffs from among industry “surplus” helps to “feed the hungry” while also diminishing the amount of refuse deposited in landfill sites, sparing corporations disposal costs and landfill tipping fees, and helping them forge an image of good corporate citizenship. However, the reliance of food banks on industry donations means that food assistance becomes defined as that which the corporate sector cannot retail. Moreover, the intertwining of food bank work with corporate needs may function to further entrench this ad hoc secondary food system and mitigate against initiatives to develop more effective responses to problems of hunger and food insecurity in our communities. One of the most attractive aspects of food and agricultural studies for scholars is the level of public interest in the subjects of our research. Such interest means that food and agriculture scholars often become public scholars, asked to comment on issues of great interest to the public. In addition, food and agriculture scholars often have the opportunity to partner more directly with community organizations to perform community-based research. Such studies take many forms, but community (...) members often take a lead role, helping plan the study as well as participate in data collection and analysis. Community based research may be very rewarding, but scholars involved in such research need to deal with a lack of control that inevitably goes along with it. This article gives examples of such research and discusses the public role of food and agriculture studies in general, in particular highlighting what can be learned from public responses to a 2009 shortage of Eggo waffles. A key focus for agri-food scholars today pertains to emerging “alternative food movements,” particularly their long-term viability, and their potential to induce transitions in our prevailing conventional global agri-food systems. One under-studied element in recent research on sustainability transitions more broadly is the role of disruptive events in the emergence or expansion of these movements. We present the findings of a case study of the effect of a sudden acute food safety crisis—bovine spongiform encephalopathy, or mad (...) cow disease—on alternative beef production in the Province of Alberta, Canada. Employing the conceptual lens of Sustainability Transition Theory, we explore the perspectives of conventional and alternative beef producers, treating alternative beef production as a niche operating within the dominant regime of global industrial agri-business. Three key findings are presented here. First, food safety risks and disruptive events can emerge as a direct consequence of the socio-ecological contradictions embedded in industrial agriculture, representing an opportunity for expansion of agricultural niches. Second, certain features of socio-economic regimes can also contribute to niche emergence, such as an economic system that disenfranchises beef-producing families. Finally, our study highlights the high level of diversity among niche agents and the complex and nuanced nature of their support for the niche. (shrink)

Clinical studies as well as hundreds of case reports have indicated that Yan Xin Life Science Technology has enabled human participants to live a normal life with little or no food intake for prolonged periods—a state referred to as bigu. Bigu is described in historical records as “taking in qi to avoid food,” and is regarded as a special technique to achieve a long and healthy life. In this study, experiments were designed to study whether cells in (...) vitro can survive without commonly acknowledged essential nutrients after receiving external qi treatments from Dr. Yan Xin, a chief physician and a renowned life scientist. Results reported here indicate that mouse hybridoma cells can survive in Dulbeco’s modified Eagles medium without serum or in phosphate-buffered saline buffer without other nutrient ingredients after qi treatment. These results are the first evidence that a cellular equivalent of the human bigu phenomenon or cellular bigu phenomenon may occur. (shrink)

COVID-19 has brought to light the severity of economic inequalities by testing the capacity of the poorest families to make ends meet. Food insecurity has in fact soared all over the UK, with many people forced to rely on food support providers to not go hungry. This paper uses a unique dataset on 55 food support organizations active in Greater Manchester during the first COVID-19 wave, and 41 semi-structured interviews with food aid spokespersons and stakeholders, to (...) shed light on what they overcame, the complications and drawbacks of the food emergency response plan put in place. The results indicate that food aid organizations that remained open were surprisingly effective despite the growth in user demand and the decrease in volunteers. However, the necessity to maintain a timely supply food at all costs came with important drawbacks. The lockdown measures that followed COVID-19 not only affected the financial stability and management of the organizations, and the availability of food, but undermined the ways in which food support providers used to operate. Owing to physical distancing measures and to the increasing numbers of users, more or less intangible forms of support such as financial advice, empathic listening and human warmth were partially lost, probably when they were needed more than ever. Pro-poor value chains intend to integrate smallholding farmers into high value markets to contribute to poverty alleviation and food security. Although income benefits of pro-poor value chains have been found, scant evidence exists regarding the potential for these markets to enhance food security. This study focuses on components of food access—dietary diversity, physical and financial access, and social acceptability—among households that participate in pro-poor value chains and non-participating households in the central highlands of Peru where development interventions (...) have created high value market niches for the native potato varieties that smallholding farmers have conserved for thousands of years. Using a mixed methods approach, this study assessed dietary diversity among households that participate and do not participate in pro-poor value chains, as well as their perceptions of their food access. Findings indicated that households that participate in value chains have higher dietary diversity than non-participating households but that these differences are likely due to pre-existing differences in socioeconomic status rather than any causal effect provided by value chains. The study also concluded that while participation in pro-poor value chains sometimes enhance the purchasing power of participating households, they may also weaken financial access, important for both purchasing food and travel to make those purchases. Community perspectives also indicated concerns with the acceptability of diets, which cannot likely be comprehensively addressed by pro-poor value chains. Collectively, the findings from this study cast doubt on the assumption that a linear flow exists between pro-poor value chains and enhanced food access. (shrink)

To increase donations of nutritious food, Ontario introduced a tax credit for farmers who donate agricultural products to food banks in 2013. This research seeks to investigate the role of Ontario’s Food Donation Tax Credit for Farmers in addressing both food loss and waste and food insecurity through a case study of fresh produce rescue in Windsor-Essex, Ontario. This research also documents the challenges associated with rescuing fresh produce from farms, as well as alternatives to (...) donating. Interviews with food banks, producers and key informants revealed that perceptions of the tax credit, and the credit’s ability to address FLW and food insecurity, contrasted greatly with the initial perceptions of the policymakers who created the tax credit. In particular, the legislators did not anticipate the logistical challenges associated with incentivizing this type of donation, nor the limitations of a donation-based intervention to provide food insecure Ontarians with access to fresh, nutritious food. The emerging critique of alternative food networks (AFNs) points to several factors that could impede the participation of low-income, minority communities in the movement, namely, spatial and temporal constraints, and the lack of economic, cultural, and human capital. Based on a semi-experimental study that offers 6 weeks of free produce to 31 low-income African American households located in a New Orleans food desert, this article empirically examines the significance of the impeding factors identified by previous scholarship, through participant (...) surveys before, during, and after the program. Our results suggest economic constraints are more influential in determining where the participants shop for food than spatial and temporal constraints, and the study participants exhibit high levels of human and cultural capital regarding the purchase and consumption of locally grown produce. We also find them undeterred by the market’s predominantly White, middle-class cultural social space, which leads us to question the extent to which cultural exclusivity discourages their participation in AFNs. For all five factors we find that the constraints posed to accessing the local food market were not universal but varied among the participants. Finally, the study reveals some localized social constraints, fragmented social ties in particular, as a possible structural hurdle to engaging these residents in the alternative market in their neighborhood. Multi-modal metaphor is a new perspective in metaphor research developed in modern times. Beyond the metaphor research of language, it combines text, image, sound, and other modes and provides new insights and perspectives for metaphor research. Food advertisements often combine sound, images, and other forms to promote the products and increase consumers’ desire to buy, and they often contain metaphors of multiple modes. However, under the perspective of cross-cultural research, when the same food brand is advertised in different (...) countries, the multi-modal metaphors are varied to appeal to different audiences. This article compares food advertisements in China and in the U.S. from the perspective of multi-modal metaphors, and analyzes the varied applications arising from different cultural influences. Although there is increasing public criticism of intensive livestock production, the market share of meat with an animal welfare standard exceeding legal requirements remains small. Food retailers, in their role as gatekeepers, can influence changes in production and consumption patterns. Their strategic role between farmers and consumers allows them to control commodity, information and value flow and therefore places them into a key position when it comes to the distribution of meat with a higher animal welfare standard. The aim (...) of this explorative study is to identify factors which motivate food retailers to take on the marketing of products of increased animal welfare standards, in this case, pasture-based beef. Nine in depth-interviews were conducted with representatives of the food retail industry. The interviews took place in June 2018, followed a structured guideline and were transcribed verbatim. The transcripts were categorized and evaluated using qualitative content analysis. Results showed that food retailers are driven by both extrinsic and intrinsic motives. The main extrinsic motive is the perceived customer demand. Consciousness for animal welfare and the regional production cycles, including close connection between farmers and retailers are inherently intrinsic motives. Interestingly, the interviewed retailers show a high personal interest and moral obligation with regard to sourcing and marketing pasture-based beef. As such, this research finds innovative retailers, who take on a new role in sustainable food systems which exceed classical distribution functions and may have a considerable effect in transforming the food system. A focus group study using four groups of food shoppers provides insights into consumers’ knowledge, beliefs, and behaviors regarding organic foods. Two focus groups consisted of shoppers who regularly bought organic foods and two focus groups of shoppers who predominantly purchased conventional foods. Participants in one of the conventional groups were all Caucasian; in the other they were all African-American. While familiarity with organic foods was much lower in the African-American group, its members were more receptive and positive towards (...) organic foods. Likewise, the African-American shoppers were more accepting of price premiums for organics foods. In comparing the two organic shopper groups with the two conventional shopper groups, it was found that the former were generally more knowledgeable about organic foods. They were also more likely to follow a special diet than conventional Caucasian shoppers. However, the behavior of organic shoppers varied widely. The research supports examining social justice and access as motivations for changing policies to support organic agriculture. (shrink)

Against the backdrop of frequent food safety problems, the importance of establishing food traceability systems has become increasingly important and urgent to address the contradiction between consumer information on safe food choices and the proliferation of problematic foods. The purpose of this study is to empirically study the influencing factors of Chinese consumers on the food traceability system in the food safety field. In this study, multiple models—push factor, pull factor, mooring factor, and switching intention—were (...) integrated into the push-pulling-mooring theory to form a conceptual PPM comprehensive model framework to study the switching intentions of two-dimensional code traceability technology for dairy products of Chinese consumers. By collecting the questionnaire survey, 305 valid questionnaires were collected from the consumers of middle- and high-end dairy products in China, and the influencing factors of thrust, pull, and mooring force were identified. The results showed that 10 of the 11 hypotheses were positive, but the impact of perceived risk on user satisfaction was negative. The important value of this study is to conduct a comprehensive empirical analysis of the key factors influencing consumer choice of traceable safe food through an integrated multi-model framework to help identify ways to establish and improve consumer willingness to use QR code traceable system products, to increase consumer confidence in the use of traceable and safe food choices. Some innovation would improve the situation of many involved in these studies, including: study subjects, those who monitor studies, and clinical investigators as well as Institutional Review Boards. Respecting patient and whistle-blower input; appreciating research staff contributions; and implementing a systems and partnership approach would foster quality and advance clinical research.

As local food activities expand and grow, an important question to answer is how various participants contribute to a local food system’s overall vitality and strength. This paper does so by focusing on the relationships between locally-oriented farm and retail actors and assessing what the configuration of these relationships tells us about the workings of the broader local food system. Such an analysis reveals two things. Empirically, it shows the important role food retailers play in the (...) overall vibrancy of local food exchanges: food retailers form crucial links holding the broader system together and significantly expanding consumer access to local foods. Further, different retailer types have distinct impacts on network configurations, each serving particular roles in the development and maintenance of local food systems. Methodologically, this paper shows the value of applying social network analysis techniques to the study of local food systems: such an approach yields insights that may not be as readily assessable from other strategies. In this paper, I overview common network analysis techniques and apply them to a case study of local food activities in New England, suggesting how such an approach might be applied to local food systems in other places. This book is a qualitative, interpretive, phenomenological, and interdisciplinary, examination of food and food practices and their meanings in the modern world. Each chapter thematically focuses upon a particular food practice and on some key details of the examined practice, or on the practice’s social and cultural impact.

Data-driven algorithms are currently deployed in several fields, leading to a rapid increase in the importance algorithms have in decision-making processes. Over the last years, several instances of discrimination by algorithms were observed. A new branch of research emerged to examine the concept of “algorithmic fairness.” No consensus currently exists on a single operationalization of fairness, although causal-based definitions are arguably more aligned with the human conception of fairness. The aim of this article is to investigate the degree of this (...) alignment in a case study inspired by a recent ruling of an Italian court on the reputational-ranking algorithm used by a food delivery platform. I relied on the documentation of the legal dispute to discuss the applicability, intuitiveness and appropriateness of causal models in evaluating fairness, with a specific focus on a causal-based fairness definition called “counterfactual fairness.” I first describe the details of the dispute and the arguments presented to the court, as well as the court’s final decision, to establish the context of the case study. Then, I translate the dispute into a formal simplified problem using a causal diagram, which represents the main aspects of the data generation process in the case study. I identify the criteria used by the court in ruling that the algorithm was unfair and compare them with the counterfactual fairness definition. The definition of counterfactual fairness was found to be well aligned with the human conception of fairness in this case study, using the court order rationale as a gold standard. (shrink)

Critical development and food studies scholars argue that the current food security paradigm is emblematic of a ‘New Green Revolution’, characterized by agricultural intensification, increasing reliance on biotechnology, deepening global markets, and depeasantization. High-profile examples of this model are not hard to find. Less examined, however, are food-security programs that appear to work at cross-purposes with this model. Drawing on the case of Feed the Future in Guatemala, I show how USAID engages in activities that valorize (...) ancestral crops, subsistence production, and agroecological practices. Rather than the result of macro-level planning—of either the New Green Revolution or a greener reform regime—I argue that nonconforming food security projects can be traced to individual actors and their interactions on the ground. I draw on an ‘interface approach’ (Long 1990 ), focusing on the lifeworlds of development workers, their interfaces with each other, and with the to-be-developed. Doing so reveals how food security projects are significantly shaped by the relationships and interests of development actors enmeshed in particular organizational and national settings. This research contributes a fresh perspective on the food security paradigm and its role within the ‘corporate food regime’. (shrink)

A number of high-profile mislabeling incidents have led to many studies exploring the decision-making processes that firms make around performing illegal acts. However, it remains unclear why the proportion of firms conducting these acts constantly fluctuates and never disappears. Therefore, this study investigated this by carrying out a longitudinal analysis of food labeling in the Taiwanese rice industry. Drawing on the institutional isomorphism theory, it was found that the degree of mislabeling is negatively correlated with both the level (...) of control of inspection regulations and public attention toward food regulations, and positively correlated with the previous proportion of firms mislabeling their products. Thus, there is a feedback loop between regulatory control, public attention, and the amount of mislabeling, with the amount of mislabeling not only being affected by the former degree of regulatory control, public attention, and mislabeling, but also modifying the future status of each of these. These findings further our understanding of the causal effects of illegal actions in the institutional agricultural environment. (shrink)

AbstractSocial Ecological System research highlights the importance of understanding the potential of collective actions, among other factors, when it comes to influencing the transformative configuration of agri-food systems in response to global change. Such a response may result in different desired outcomes for those actors who promote collective action, one such outcome being food sovereignty. In this study, we used an SES framework to describe the configuration of local agri-food systems in Andean Ecuador in order to understand (...) which components of the SES interact, and how they support outcomes linked to five food sovereignty goals. Through a survey administered to mestizo and indigenous peasants, we analyze the key role played by the Agroecological Network of Loja in transforming the local agri-food system through the implementation of a Participatory Guarantee System. This study demonstrates that participation in the RAL and PGS increases farmers’ adoption of agroecological practices, as well as their independence from non-traditional food. Additionally, RAL lobbying with the municipality significantly increases households’ on-farm income through access to local markets. Being part of indigenous communities also influences the configuration of the food system, increasing the participation in community work and access to credit and markets, thus positively affecting animal numbers, dairy production and income diversification. The complexity of the interactions described suggests that more research is needed to understand which key factors may foster or prevent the achieving of food sovereignty goals and promote household adaptation amid high uncertainty due to global change. Although many consider professional ethics in the food supply chain an essential topic that should be covered in any degree program, few higher education institutions currently include a module on ethics in their study programs. Instead, ethics is taught in tandem to the core curriculum and is often embedded in the contents of other modules rather than treated as a subject in its own right. Ethics, however, is important enough to warrant a different teaching and educational approach. This book (...) provides support for development of a course in ethics for food studies education. The book is divided into 3 sections, each containing several chapters: Section 1 includes chapters that identify and discuss several ethical issues along the food chain, with particular attention given to issues in the food industry and in consumer behavior; Section 2 includes chapters that present the basis of a code of conduct in the food profession, as well as descriptions of existing codes of conduct for food industry and food scientist professionals. These include codes for the ethics of publishing, and also ethics in risk communication; Section 3 includes chapters based on case studies with examples of teaching approaches currently used in teaching food ethics. These approaches are easy to implement and have already been tested and confirmed as successful examples that engage students in this topic. (shrink)

When people make judgments about the effects of a perturbation on populations of species in a food web, their judgments exhibit the dissipation effect: a tendency to judge that effects of the perturbation weaken or dissipate as they spread out through the food web from the locus of the perturbation. In the present research evidence for two more phenomena is reported. Terminal locations are points in the food web with just a single connection to the rest of (...) the web. Judged changes tended to be higher for species at terminal locations than for species the same distance from the perturbation but at nonterminal locations. Branches are points in the web where a route splits into two or more routes. Judged changes tended to be lower for species following branching points than for species the same distance from the perturbation but not following branching points. It is proposed that the findings can be explained as effects of a mental model employing concepts of influence and resistance. Under this model a perturbation is a change in energy level at a point in the system that acts as an influence affecting the rest of the system. The basic concepts in this model are domain‐general and on that basis it is predicted that the dissipation effect should be found in judgments of any physical system to which notions of influence and resistance can be applied. There is an ongoing debate about genetic engineering (GE) in food production. Supporters argue that it makes crops more resilient to stresses, such as drought or pests, and should be considered by researchers as a technology to address issues of global food security, whereas opponents put forward that GE crops serve only the economic interests of transnational agrifood-firms and have not yet delivered on their promises to address food shortage and nutrient supply. To address discourse failure regarding (...) the GE debate, research needs to understand better what drives the divergent positions and which moral attitudes fuel the mental models of GE supporters and opponents. Hence, this study investigates moral attitudes regarding GE opposition and support in Germany. Results show that GE opponents are significantly more absolutist than supporters and significantly less likely to hold outcome-based views. Furthermore, GE opponents are more willing to donate for preventing GE admission than supporters are willing to donate for promoting GE admission. Our results shed light on why the divide between opponents and supporters in the German GE debate could remain stark and stable for so long. (shrink)

At a time when agri-food biotechnologies are receiving a surge of investment, innovation, and public interest in the United States, it is common to hear both supporters and critics call for open and inclusive dialogue on the topic. Social scientists have a potentially important role to play in these discursive engagements, but the legacy of the intractable genetically modified (GM) food debate calls for some reflection regarding the best ways to shape the norms of that conversation. This commentary (...) argues that agri-food scholars interested in promoting a more constructive agri-food biotechnology discussion could do so by blending key insights, as well as guarding against key shortcomings, from the fields of science communication and science and technology studies (STS). Science communication’s collaborative and translational approach to the public understanding of science has proven pragmatically valuable to scientists in academia, government, and private industry, but it has too often remained wedded to deficit model approaches and struggled to explore deeper questions of public values and corporate power. STS’s critical approach has highlighted the need for multi-stakeholder power-sharing and the integration of diverse knowledge systems into public engagement, but it has done little to grapple with the prevalence of misinformation in movements against GM foods and other agri-food biotechnologies. Ultimately, a better agri-food biotechnology conversation will require a strong foundation in scientific literacy as well as conceptual grounding in the social studies of science. The paper concludes by describing how, with attention to the structure, content, and style of public engagement in the agri-food biotechnology debates, social scientists can play a productive conversational role across a variety of academic, institutional, community-level, and mediated contexts. This study examined 153 foodstuff commercials on a popular British television channel. Eighty ‘Daytime’ and 73 ‘Evening’ commercials were separately coded for 11 content categories; constituting attributes pertaining to central advertised figures. Although both sexes were portrayed stereotypically for eight daytime and nine evening content analytic categories, daytime advertisements tended to reveal advertisers' awareness of a female audience which tended to be reflected in greater proportions of non-stereotyped female depictions rather than a salience of female stereotypes. This study examines the food flow in Tianjin, divided into three areas (urban, suburban, and rural), as a case study to gain a better understanding of local and regional food flows and ecosystem performance. The study has the following objectives: (1) to evaluate the capacity for self-sufficiency within Tianjin’s administrative boundary by estimating a self-sufficiency ratio (SSR) using statistical data at both the city and local scales, (2) to estimate food flow at the city scale from field (...) surveys of the local markets and statistics provided by the local government, and (3) to examine the real flows of the two primary types of arable crops (cereal grains and vegetables) at the local level by conducting semi-structured household interviews. The results of this study show that Tianjin has experienced a rapid increase of self-sufficiency capacity since the 1980s, and it appears to have the capacity to support the citizens within its borders. Rural areas have had a surplus in all of the studied food categories since the 1980s, and suburban areas have a history of high estimated SSR for vegetables, poultry, and fish. However, a low degree of locally sourced product flow was observed in this study. Most of the local cereal crops were consumed in the agricultural production areas, but 70 % of the vegetables produced in the rural areas flowed outside of Tianjin and did not support Tianjin local consumption. To reduce its vulnerability to food security issues and to promote a more environmentally desirable local food system, Tianjin needs to recognize the high productivity of its local ecosystem and reduce its dependence on other remote ecosystems for its food needs. Silicon Valley and its innovation center counterparts have come upon food and agriculture as the next frontier for their unique style of innovation and impact. But what exactly can the tech sector, with expertise in information and communication technologies, bring to a domain in which the biophysical materiality of soil, plants, animals and human bodies have most challenged farmers and food companies? Based on a detailed analysis of all of the companies that have pitched their products at events (...) sponsored by the Silicon Valley-based convener, Foodbytes!, we show that a large proportion of tech-driven solutions are digital technologies transferred from other domains. These technologies at best inform decision-making on the ecological processes of food and farming, but do not provide tools to treat them, and otherwise provide business solutions not even aimed at major challenges in food and farming. Drawing on a small set of interview data, we additionally suggest that tech entrepreneurs migrate to food and agriculture because it seems purposeful, exciting, or lucrative, but sometimes lack a clear understanding of the problems they might solve with their digital technologies. In making our case about the mismatch of problem and solution, we bring into conversation recent critiques of digital solutionism with abiding concerns in agrarian political economy and critical food studies regarding the role of the biological in both challenging food production and spurring technological intervention. In three studies, we examined food as an elicitor of nostalgia. Study 1 participants visualised eating either a nostalgic or regularly consumed food. Study 2 participants visualised consuming 12 foods. Study 3 participants consumed 12 flavour samples. Following their food experiences, all participants responded to questions regarding the profile of food-evoked nostalgia (i.e. autobiographical relevance, arousal, familiarity, positive and negative emotions) and several psychological functions (i.e. positive affect, self-esteem, social connectedness, meaning in life). Study 2 (...) and 3 participants also reported their state nostalgia. Results revealed that food is a powerful elicitor of nostalgia. Food-evoked nostalgia has a similar contextual profile to previously examined elicitors, but is a predominantly positive emotional experience. Food-evoked nostalgia served multiple psychological functions and predicted greater state nostalgia. (shrink)

Scholarship flourishes in inclusive environments where open deliberations and generative feedback expand both individual and collective thinking. Many researchers, however, have limited access to such settings, and most conventional academic conferences fall short of promises to provide them. We have written this Field Report to share our methods for cultivating a vibrant intellectual community within the Science and Technology Studies Food and Agriculture Network (STSFAN). This is paired with insights from 21 network members on aspects that have allowed (...) STSFAN to thrive, even amid a global pandemic. Our hope is that these insights will encourage others to cultivate their own intellectual communities, where they too can receive the support they need to deepen their scholarship and strengthen their intellectual relationships. We investigate empirically whether framing in general, and the use of Simplifying Models as a framing tool in particular, has an effect on the way topics are cognitively construed. Existing studies on framing in linguistics have either been theoretical or descriptive. Going beyond such methodologically simple approaches, we use a more rigid test design involving the use of a control group, the construction of test conditions in which different Simplifying Models constitute the major source of variation, the inclusion of (...) independent variables like age and prior knowledge of the subjects, and the use of linear and logistic regression analysis. Our results show that our more rigid methodological approach yields a more reliable image of the effect of Simplifying Models on the way in which people deal with information on a complex topic like sustainable food production. Fleshing out these effects further may in time lead to a better informed construction of communication on complex social topics. (shrink)

None of us can avoid being interested in food. Our very existence depends on the supply of safe, nutritious foods. It is then hardly surprising that food has become the focus of a wide range of ethical concerns: Is the food we buy safe? Is it produced by means which respect the welfare of animals and sustain the land? Are modern biotechnologies employed in food production immoral? This book addresses such issues by applying ethical principles to (...) many areas of current concern. The contributors provide original and thought-provoking treatments of a number of highly topical issues - from global hunger and its ethical implications to the cultural habits affecting consumption. 이 연구는 음식에 대한 윤리적 접근으로서 로컬푸드에 나타난 음식의 윤리적 의미를 밝혀보고자 한다. 이제는 먹거리 선택이 단순히 개인의 취향이나 식성에 따른 선택이 아니라 윤리적 선택이어야 함을 밝히고, 로컬푸드운동과 관련된 다양한 논의들을 중심으로 세계식량체계와 지역식량체계라는 분석 틀을 통해 글로벌푸드와 로컬푸드의 장단점을 살펴보았고, 구체적인 로컬푸드운동으로는 농민시장과 공동체지원농업, 그리고 학교급식의 문제를 살펴보았다. 이를 통해 음식과 인간, 자연의 관계에서 생명부정과 생명긍정의 관계를 통해 규정되는 음식을 먹어야 하며, 생명을 살리는 음식과 그렇지 못한 음식의 구분은 인간의 기본적인 먹을 권리에 대한 존중에 근거하고 있다는 로컬푸드의 윤리적 의미를 (...) 찾아보았다. 그래서 먹거리의 자연화와 맥락화, 먹거리 생산자와 소비자의 인식전환을 통해 새로운 먹거리공동체 형성의 필요성을 제시하고 있다.
