The study aimed to identify risk attitudes of users of the Food and Nutrition Unit (UAN)located in Botucatu, SP; correlate them to food safety and to observe if there were behavioral changes after indirect educational intervention. This is an exploratory qualitative analysis study, using a non-participant observation technique. Initially, we sought to identify the most common risk attitudes among users, to develop educational materials relating the conduct during self-service to the possible risks of contamination, and thus to verify if there (...) were behavioral changes. Poor hand hygiene was seen as one of the most important points to work on, as none of the diner participants performed such an attitude. It was possible to observe small changes in the behavior of some users, showing that educational measures should be applied continuously for better awareness and greater effects. (shrink)

Food Services generate solid waste from the production process and distribution of meal. The raw material, after a rational flow, is transformed into meals for consumption generating solid waste of variable composition and quantity. Waste recovery actions in the recycling and selective collection in these services act as inhibitors of the inadequate disposal of these wastes in the environment, contributing to environmental sustainability. The objective of this study is to analyze the generation and viability of commercialization of recyclable solid waste (...) in Food Services of companies located in Cuiabá and Várzea Grande, Mato Grosso – Brazil. This is a cross-sectional exploratory study with a convenience sample. The analysis of the generation of residues was carried out using the weighing method and generation indices using descriptive statistics. In order to verify the economic potential of recyclable waste, the value of intermediate consumption was used and sales price data were obtained by means of the publication "Compromisso Empresarial para Reciclagem" CEMPRE. It was found that in six services the largest part of waste was made of plastic, and in two services it was paper and cardboard. The generation of aluminum was more significant in one service, being the residue that added more economic value in the commercialization. The generation of glass and tetra pack packaging were not significant, and the recycling of both is not of interest to the scavengers. The results indicate that the commercialization of recyclable solid waste is viable. (shrink)

In a hospital UFNs, an outbreak of food poisoning can have disastrous consequences and aggregate risk of death for patients. Thus, the training of food handlers is critical to ensuring the quality of the food that is produced. The aim of this study was to implement the SOPs related to sanitation and disinfection of equipment and utensils, by means of a training, containing illustrative figures and everyday issues on the subject; and evaluate the daily practice of sanitation and disinfection activities (...) before and after the intervention with employees of UFN. We developed and implemented a guidefor inspection of best practices in sanitation of equipment and utensils at two different times, before and after the intervention with the food handlers. The results showed a significant improvement in the situation of this unit in terms of practice, frequency and fulfillment of stages related to sanitation and disinfection of equipment and utensils. We concluded that the implementation of SOPs for sanitation and disinfection was carried out successfully, and that empowering employees with dynamic and interactive training allows them a greater understanding of the importance of hygiene practices in the daily routine of UFN. The goal of this study was to evaluate and compare the hygienic-sanitary conditions of two Units of Food and Nutrition (UANs) (A and B) located in two municipalities of the Vale do Taquari, Rio Grande do Sul, by means of Ordinance No. 78/2009, which established the Checklist of Good Practices for Food Services. This legislation composes a checklist with 153 criteria distributed in 12 categories. Each criterion is endowed with the options "Yes", "No" and "NA" (not applicable), which were marked (...) with an "x", being: "NA" when the criterion did not correspond to the UAN reality, "No" when the criteria were not in compliance with the legislation, and "Yes" when UAN met the evaluation criteria legislation. The classification of each UAN followed the scoring criteria established by RDC 275/2002. The a UAN presented a total of 90.85% (n = 129) of compliance and the "B" UAN totaled 88.27% (n = 128) of compliance. Both were classified in Group 1 of DRC 275/2002. The "A" UAN presented 05 nonconforming categories, totaling 13 criteria (9.15%), and Unit B 08 nonconforming categories, totaling 17 criteria (11.72%). Both UANs had good hygienic-sanitary conditions because they met most of the criteria in accordance with the legislation. (shrink)

This study aimed to evaluate the food production and then act to increase the quality and security of a service, in order to meet the requirements for qualification HAPPC, using good manufacturing procedures as starting point for implementation. It is characterized as an intervention study, emphasizing the quality of foods and the use of good manufacturing procedures at the foodservice and nutrition units, located in Botucatu-SP. It was composed of 2 moments. In the first, we applied a check-list for ascertainment (...) of non-conformity and in the second moment a training “in loco” was given for the collaborators. The lack of hygienic cleaning of hands is seen as an important negative point. We verified that the biggest difficulties and irregularities are related to the manipulators which don´t follow the rules. Good manufacturing procedures were obtained to increase the quality and the security of foods in the unit, but these must be kept constantly adjusted to the standards. (shrink)

An adequate theory of rights ought to forbid the harming of animals to promote trivial interests of humans, as is often done in the animal-user industries. But what should the rights view say about situations in which harming some animals is necessary to prevent intolerable injustices to other animals? I develop an account of respectful treatment on which, under certain conditions, it’s justified to intentionally harm some individuals to prevent serious harm to others. This can be compatible with recognizing (...) the inherent value of the ones who are harmed. My theory has important implications for contemporary moral issues in nonhuman animal ethics, such as the development of cultured meat and animal research. (shrink)

In recent discussions, it has been argued that a theory of animal rights is at odds with a liberal abortion policy. In response, Francione (1995) argues that the principles used in the animal rights discourse do not have implications for the abortion debate. I challenge Francione’s conclusion by illustrating that his own framework of animal rights, supplemented by a relational account of moral obligation, can address the moral issue of abortion. I first demonstrate that Francione’s animal (...) rights position, which grounds moral consideration in sentience, is committed to the claim that a sentient fetus has a right to life. I then illustrate that a fully developed account of animal rights that recognizes the special obligations humans have to assist animals when we cause them to be dependent and vulnerable through our voluntary actions or omissions is committed to the following: a woman also has a special obligation to assist a sentient fetus when she causes it to be dependent and vulnerable through her voluntary actions or omissions. From these considerations, it will become evident that a fully developed and consistent animal rights ethic does in fact have implications for the abortion discussion. (shrink)

Because factory-farmed meat production inflicts gratuitous suffering upon animals and wreaks havoc on the environment, there are morally compelling reasons to become vegetarian. Yet industrial plant agriculture causes the death of many field animals, and this leads some to question whether consumers ought to get some of their protein from certain kinds of non factory-farmed meat. Donald Bruckner, for instance, boldly argues that the harm principle implies an obligation to collect and consume roadkill and that strict vegetarianism is thus immoral. (...) But this argument works only if the following claims are true: all humans have access to roadkill, roadkill would go to waste if those who happen upon it don’t themselves consume it, it’s impossible to harvest vegetables without killing animals, the animals who are killed in plant production are all-things-considered harmed by crop farming, and the best arguments for vegetarianism all endorse the harm principle. As I will argue in this paper, each claim is deeply problematic. Consequently, in most cases, humans ought to strictly eat plants and save the roadkill for cats. (shrink)

Knowledge about eating habits is relevant for understanding the relations between diet, obesity and development of Chronic Non-Communicable Diseases. The storage of calories as body fat, mainly in the visceral subcutaneous adipose tissue, as consequence of hypercaloric diet poor in nutrients, is responsible for increasing sublinic inflammation and overloading the immune system. Diet plays an important role in reducing inflammation. In time of infectious pandemia, of the new corona virus (COVID-19), the food quality and nutritional status of Brazilians may interfere (...) in fighting this infection. Based on the literature, this article aims to discuss the Brazilians eating habbits and nutritional status. The data shows that Brazilian are gainning weight and tend to a diet poor in nutrient intake. Consequently this scenario favors the subclinical inflammation and the weakness of the immune response. We suggest that Brazilian Health Authorities pay attention to this issue. (shrink)

In The Case for Animal Rights, Tom Regan argues that although all subjects-of-a-life have equal inherent value, there are often differences in the value of lives. According to Regan, lives that have the highest value are lives which have more possible sources of satisfaction. Regan claims that the highest source of satisfaction, which is available to only rational beings, is the satisfaction associated with thinking impartially about moral choices. Since rational beings can bring impartial reasons to bear on decision (...) making, Regan maintains that they have an additional possible source of satisfaction that nonrational beings do not have and, consequently, the lives of rational beings turn out to have greater value.. Soil sustainability may be simply defined as the maintenance of soil productivity for future generations. There are both positive and negative aspects concerning the role of animals in soil sustainability. In a positive sense, agroecosystems which include ruminant animals often also include hay forage-or pasture-based crops in the humid regions. Such crops stabilize the soil by decreasing erosion, improving soil structure and usually require (...) fewer chemical inputs. Monogastric animal culture is based on an agroecosystem consisting of mainly grain crops. These crops can result in the soil being exposed to water and wind erosion although soil conservation practices that significantly reduce soil losses may be followed. The management of animal manures is not always compatible with soil conservation practices. Careful management of the nutrients in manure is absolutely necessary to avoid nitrate contamination of ground water or phosphorus loading of streams and lakes. In a negative sense, increases in animal livestock populations in association with human population growth are promoting desertification in the arid and semi-arid regions of the world. The key component for a fully compatible and acceptable association between domestic animals and soil productivity is proper management. Careful management of the components of an animal-based agroecosystem is required if soil productivity and environmental quality are to be maintained. Este artigo compara e contrapõe a abordagem naturalista pragmatista para a peculiaridade da linguagem, exemplificada, principalmente, mas, não exclusivamente, por John Dewey, com a extensa abordagem de Charles Taylor em seu O animal linguístico. Taylor, inspirado pelas obras de Hamann, Herder, e Humboldt, conta com recursos filosóficos e conceituais diferentes para o delineamento do que ele denomina de ‘a forma’ da capacidade linguística humana. Porém, Dewey e Taylor chegam a posições que se sobrepõem sem se identificar: a linguagem é (...) a característica definidora constitutiva dos seres humanos. Seres humanos são definidos pelo surgimento da ‘como’ consciência, uma ‘ruptura’ em nossa imersão imediata no mundo, e, como Peirce e Dewey mostraram de maneira tão lúcida, um reflexivo estar consciente do uso de signos e sistemas de signos de todos os tipos. Esses sistemas potencializam e transformam nosso acesso ao mundo e a nós mesmos. Eles não apenas rotulam um mudo já existente. Eles criam âmbitos de significados e valores que não surgiram sem eles. A distinção crucial de Taylor entre os modelos designativo e constitutivo da linguagem é apoiada plenamente pela consideração pragmatista da linguagem, a qual Taylor não declara. Essa distinção mostrará ser de importância especial para Dewey e Taylor na criação de paisagens existencialmente vitais de significado incorporados nas autodescrições e nas práticas delicadas das artes de auto-reflexão. Tanto Dewey quanto Taylor mostram que assim como as texturas abertas da experiência crescem por suas extremidades, assim a própria linguagem possui sua própria “extremidade” e nos aponta para os domínios “liminares” que sustentam o limiar do sentido para além do totalmente dizível. Esses domínios, que eles mostram de maneiras diferentes mas complementares, são acessados como realidades por formas não discursivas que abrangem as obras de arte, o que Taylor denomina de ‘representações,’ e rituais performativos e restaurativos, tanto pessoais, cívicos e religiosos que incorporam os significados. Dewey e Taylor, divergem, entretanto, sobre se e de que maneira estes domínios precisam transcender a natureza. (shrink)

The recent development and growth oforganic livestock farming and the relateddevelopment of national and internationalregulations has fueled discussions amongscientists and philosophers concerning theproper conceptualization of animal welfare.These discussions on livestock welfare inorganic farming draw on the conventionaldiscussions and disputes on animal welfare thatinvolve issues such as different definitions ofwelfare (clinical health, absence of suffering,sum of positive and negative experiences,etc.), the possibility for objective measuresof animal welfare, and the acceptable level ofwelfare. It seems clear that livestock welfareis a (...) value-laden concept and that animalwelfare science cannot be made independent ofquestions of values and ethics. The questioninvestigated here is whether those values thatunderpin organic farming, in particular, alsoaffect the interpretation of livestock welfare,and, if so, how. While some of the issuesraised in connection with organic farming arerelatively uncontroversial, others are not. Theintroduction of organic farming values seems tointroduce new criteria for what counts as goodanimal welfare, as well as a different ethicalbasis for making moral decisions on welfare.Organic farming embodies distinctive systemicor communitarian ethical ideas and the organicvalues are connected to a systemic conceptionof nature, of agriculture, of the farm, and ofthe animal. The new criteria of welfare arerelated to concepts such as naturalness,harmony, integrity, and care. While the organicvalues overlap with those involved in theconventional discussion of animal welfare, someof them suggest a need to set new prioritiesand to re-conceptualize animal welfare – forexample, with respect to ``naturalness,'''' inrelation to the possibilities for expression ofnatural behavior and in relation to animalintegrity as a concept for organismic harmony.The organic perspective also seems to suggest awider range of solutions to welfare problemsthan changes in farm routines or operations onthe animals. The systemic solutions include thechoice and reproduction of suitable breeds,changes in the farm structure, and changes inthe larger production and consumption system – including consumer perceptions andpreferences. But the organic values may alsocall for sacrifices of individual welfare in aconventional sense in order to advance welfarefrom the perspective of organic farming.Whether this is good or bad cannot be decidedwithout entering into an inquiry and discussionof the values and ethics involved. The view that we are animals -- animalism -- is often misunderstood. It is typically stated in unhelpful or misleading ways. Debates over animalism are often unclear about what question it purports to answer, and what the alternative answers are. The paper tries to state clearly what animalism says and does not say. This enables us to distinguish different versions of animalism.

Animal ethicists have recently debated the ethical questions raised by disenhancing animals to improve their welfare. Here, we focus on the particular case of breeding hens for commercial egg-laying systems to become blind, in order to benefit their welfare. Many people find breeding blind hens intuitively repellent, yet ‘welfare-only’ positions appear to be committed to endorsing this possibility if it produces welfare gains. We call this the ‘Blind Hens’ Challenge’. In this paper, we argue that there are both empirical (...) and theoretical reasons why even those adopting ‘welfare-only’ views should be concerned about breeding blind hens. But we also argue that alternative views, which (for example) claim that it is important to respect the telos or rights of an animal, do not offer a more convincing solution to questions raised by the possibility of disenhancing animals for their own benefit. This is the first comprehensive translation of the expanded French version of E.F.F. Chladni's Traité d'Acoustique, using Chladni's 1802 Die Akustik for reference and clarification. Chladni's experiments and observations with sound and vibrations profoundly influenced the development of the field of Acoustics. The famous Chladni diagrams along with other observations are contained in Die Akustik, published in German in 1802 and Traité d'Acoustique, a greatly expanded version, published in French in 1809. The present translation was undertaken by Robert T. Beyer, (...) PhD (1920-2008), noted acoustician, Professor of Physics at Brown University, and Gold Medal recipient of the Acoustical Society of America. Quand on parle d'une substance et de ses accidents, peut-on dire que tous deux sont des etants au meme sens? Quand on parle de Dieu et de ses creatures, peut-on dire que tous les deux sont bons ou justes au meme sens? Quand on parle d'une potion et d'un animal, peut-on dire que tous les deux sont sains au meme sens? Telles sont les problematiques metaphysiques, theologiques et semantiques que la notion d'analogie developpee par les penseurs du Moyen Age (...) cherche a affronter. Les quatre etudes, issues des Conferences Pierre Abelard presentees a l'Universite de Paris-IV Sorbonne en 2004, examinent les modes complexes selon lesquels ces trois problematiques se sont croisees et les questionnements nouveaux auxquels elles ont donne lieu pendant plus de quatre siecles. L'auteur interprete la pensee de Thomas d'Aquin dans le contexte qui en a permis l'emergence, et analyse les critiques qui ont suivi, ainsi que les reponses nouvelles qui ont ete avancees. The necessity of incorporating societal and environmental concerns into publicly funded agricultural initiatives in research, extension, and practice is increasingly evident. Agriculturalists are urged to acknowledge and respond to societal concerns before an insensitive and largely ill-informed urban majority assumes a dominant posture in agricultural policy. In recent history, the availability of unrealistically cheap energy encouraged the evolution of a form of commercial agriculture unfettered by sound ecological principles. At present, external, resource-intensive intervention of increasing magnitude is needed to compensate (...) for the apparent ecological instability generated by practices such as intensive cereal management or conservation tillage practices. Polarization of the enterprises of plant and animal agriculture to enable centralized, concentrate-intensive, confinement feeding has disrupted the natural cycling of nutrients and carbon in the soil, encouraged the withdrawal of perennial forages from crop rotations, and invoked a widely ramifying network of agricultural and societal problems. Solutions to these problems must evolve from a holistic and far-reaching appraisal of causes, rather than from a piecemeal approach to individual symptoms. (shrink)

Higher-order thought theories maintain that consciousness involves the having of higher-order thoughts about mental states. In response to these theories of consciousness, an attempt is often made to illustrate that nonhuman animals possess said consciousness, overlooking an alarming consequence: attributing higher-order thought to nonhuman animals might entail that they should be held morally accountable for their actions. I argue that moral responsibility requires more than higher-order thought: moral agency requires a specific higher-order thought which concerns a belief about the rightness (...) or wrongness of affecting another’s mental states. This “moral thought” about the rightness or wrongness is not yet demonstrated in even the most intelligent nonhuman animals, thus we should suspend our judgments about the “rightness” or “wrongness” of their actions while further questioning the recent insistence on developing an animal morality. Control of wild animals may give rise to controversy, as is seen in the case of badger control to manage TB in cattle in the UK. However, it is striking that concerns about the potential suffering of the affected animals themselves are often given little attention or completely ignored in policies aimed at dealing with wild animals. McCulloch and Reiss argue that this could be remedied by means of a “mandatory application of formal and systematic Animal Welfare Impact Assessment (...) ”. Optimistically, they consider that an AWIA could help to resolve controversies involving wild animals. The aim of this paper is to evaluate the potential of AWIA. We begin by showing how ideas akin to AWIA already play a significant role in other animal ethics controversies, particularly those concerning laboratory animal use and livestock production; and we bring in lessons learnt from these controversies. Then we comment on the suggested development and application of AWIA in the case of badger control. Finally, we discuss the prospects of applying AWIA to other sorts of wild animal controversy. We argue that the AIWA, as developed by McCulloch and Reiss, relies on several dubious premises, including that killing is a welfare issue. Furthermore, we argue that AWIA is unlikely to prevent serious moral disagreements over how to weigh concerns about wild animals against priorities in human health, the health of domestic and farm animals, and biodiversity, but that it may nonetheless serve to limit harms imposed on the wild animals.
